I love my french roller!
Left is Mozzarella (cheap stuff) mixed with grated Pecorino Romano (good stuff) and on the right are carmelized onions. Raw onions tend to burn.
Left... my FAVORITE carmelized Eggplant, on the right Finely chopped Kalamata Olives.

Mmmm..I like to blend the "good" stuff with the "cheap" stuff too. ;-)
