Cookin up some bread!!!

There has been a BUNCH of bread baking going on around here...

My boys are still growing... and they need their carbs... and good ones... so  my bread is just about the only bread they eat... and I fill it with Flax Seed Meal, Wheat germ, nuts, dried fruits... anything and everything to make it more wholesome and yummy.

I've been on a breadstick kick lately...


And a Sweet Hawaiian bread Kick...
Can I just say... that Sweet Hawaiian bread... homemade... should be OUTLAWED!!!
It's WAAAAAAY TO GOOD...

It's awesome as a grilled cheese sandwich... or as a pannini...
it's DIVINE with Nutella spread on it...

It's a long, painful process to make... with all the rising and kneading, (which I never do with my other bread) but soooo worth it...
I want to give it away to others to try... but it too precious at the moment... my family would revolt...

I don't eat the stuff... but I do taste it... and oh my... I'm so glad I'm off bread... because if I wasn't...
my 80 lost pounds would be back in minutes!!!!

I know... I know... I haven't posted on here in ... well... forever...

But still... the archives aren't too bad...

I don't EAT the bread I bake anymore... but my family and customers do...

Baking your OWN bread is THE BEST way to ensure that you are eating wholesome ingredients...no fillers, preservatives, sugars or fats...

Good bread contains 4 basic ingredients...

Leavening, flour, water and salt.

I will start posting about my fun with not using any yeast in my breads anymore... I have made my own starter and don't use any leavening except for my sourdough starter now... and the results are fantastic!!!

So... check out the archives... give a holler if you have a question... and if you are watching your carbs or trying to lose weight... remember to eat bread only once per day... and make it homemade if you can...

The book I use to make my breads

I haven't purchased one loaf, piece, baguette, roll, hot dog bun or hamburger bun in
8 MONTHS!
And it's all due to the book
ARTISAN BREAD IN 5 MINUTES A DAY
Do you realize how much money I have saved?
How wonderful it is knowing EXACTLY what is in the bread my family eats?
Having FRESH, tasty, wholesome, bread EVERY. SINGLE. DAY?
I have manipulated the recipes just a little by adding 3 tablespoons of FLAX SEED MEAL into
each and every batch I make.
It add 10 grams of fiber, loads of amino acids, and other natural nutrition to each loaf or
roll or breadstick I make.
I usually don't add the full tablespoon of salt either. I keep it to 1/2 tablespoon and it is
plenty salty for us.
Dive in and try this method!
I promise you won't be dissapointed.

I made BAGELS!!!

Real bagels... Blueberry and Cinnamon Raisin.
One more kind of bread I don't have to buy from the store.

No boiling, no double baking... just make the dough, form them, and bake them!
I still used the Artisan Bread idea... but changed the recipe a bit, and skipped the boiling part.
They are soft... chewy, sweet and yuummmmmyyy!
Instead of the regular boule dough I changed it like this
2 cups of water
1/2 tablespoon yeast
1 cup plain yogurt
1 tablespoon salt
3 tablespoons sugar
1 cup fresh, frozen or what I used was 1 cup of blueberry pie filling in the dough.
6 1/2 cups of flour
Stir, sit and store!
That's it!

I am making this for Christmas gifts for the families we visit this Holiday Season.
I'm adding homemade honey butter to go with it... in a basket... lined with a gorgeous kitchen towel.

I am so proud of how these turned out, I just had to post them!
One is going with dinner tonight, One is for making lunches for tomorrow,
The other two are gifts for neighbors for all their hard work and diligence helping
with the Clueless Wonders down the street.
